MADE IN FRANCE
Young, fresh and succulent, finely amber, surprising by its smoothness and its subtly spicy vanilla sweetness.
A renewed and charming style providing a spontaneous pleasure, easy to drink neat, on the rocks or as part in cocktails.
For 3 generations, we have been working to give this vineyard a human, environmental and sustainable orientation. Our philosophy: fully stepping in modernity while preserving our terroir, our know-how and our values.
With the same inspiration as our hedonistic, easy to drink wines, we have created UBY OAK, a style that is in line with our contemporary sensibility, adapted to the consumption patterns of the new generations.
We always selected the best parcels of tawny sands to give our eaux-de-vie their aromas.
The grapes are harvested in September. The wine, made from a unique blend of bacon and uni blanc, is vilified in a natural way, without the addition of sulphites and kept in vats at low temperature.
The distillation takes place in winter in the traditional copper fire-driven still of the house. The wine rises in temperature, the water evaporates and only the alcohol is preserved and then placed in barrels.
OAK is aged for 3 years in French oak barrels. It is during that time in the casks that an astonishing alchemy between the alcohol and the wood is created.
The first 12 months of aging in new casks gives the eau de vie its amber color, forges its structures and develops its aromatic potential.
The second 18 months of aging in old barrels allows it to develop its personality, all nuances and subtlety. The action of the wood is sobering.
For the finishing stage the aging in Sessile oak casks is the essential step to reveal its body and its unique flavors.
